1 whole egg, for thick- 2 egg yolks. Or 2 tbsps. dried

1 cup sour milk, for 1 cup sweet milk mixed with one
baking of the following: 1 T. vinegar
or 1 T. lemon juice, or 1 3/4 tsp
cream of tartar.
1 cup whole milk ½ cup evaporated milk plus½ cup
water. Or 4 T. dry whole milk
plus 1 cup water. Or 4 T. non-
f at dry milk plus 2 tsp. table
fat and 1 cup wat er.
cup skim milk 4 T. nonfat dry mi l k plus 1 cup
water.
tablespoon flour, for ½ T. cornstarch or 1 T. gran-
thickening ulated tapioca.
1 cup cake flour, for 7 /8 cup all-purpose flour.

1 cup all-purpose flour, Up to½ cup bran, whole-wheat
for baking breads flour, or corn meal plus enough
all-purpose flour to fill cup.
